It’s hard to argue that zucchini isn’t one of the most versatile vegetables around. The amount of ways it can be cooked and prepared creates so many options, and with some beautiful zucchini from Marshall’s Real Farmers Market in your box this week you’ll have plenty of chances to try some yourself.

Flourless Zucchini Bread

2 Cups nut butter
1 Cups shredded zucchini
2 Tablespoons cocoa powder
2 Eggs
3 Tablespoons maple syrup
1/2 Teaspoon cinnamon
1 Tablespoons vanilla extract
1 Teaspoons cider vinegar
1 Teaspoon baking soda
2 Pinches of sea salt
1/4 Cup Walnuts
1/4 Cup Chocolate Chips

Preheat oven to 400 F
Mix nut butter, chocolate chips, cocoa, walnuts eggs, maple syrup, cinnamon, vanilla and sea salt
Add baking soda and vinegar
Stir in shredded zucchini making sure to squeeze out any water
Pour mixture into 5×9 pan
Top with chocolate chips and walnuts as desired
Bake for 30-35 minutes
